2024 Harvest 3

Howdy folks and welcome to week 3 of your Tumbleweed Farm CSA. We’re excited to debut a few new items this week. The first outdoor spinach of the season along with the garlic scapes! If you aren’t familiar with garlic scapes you’re in for a treat. They are the flowering part of the hard neck garlic plant and they are so flavorful and pungent. You can use them the same way you’d use a bunch of scallions. They’re great raw and cooked. Any recipe that calls for a clove of garlic you can swap a garlic scape for. There’s a few recipes below to help inspire you if you’re interested.

Things out in the fields have been cold and wet. We worked hard yesterday in the rain to get the harvest all picked. The good news is that we’ve been able to take a break from irrigating and it looks like warm weather is on the way. The plants are happy out there but a little warm sunshine is needed for some of our later spring crops to start cranking!

Harvest 3

  1. Spinach— rich in iron, potassium, vitamins C & E, and magnesium. Spinach can also aid in digestion and has anticancer properties. Eat this veggie up!!

  2. Kale—super high in antioxidants, contains vitamin C, Vitamin K, Manganese and various polyphenols.

  3. Radishes—are a rich source of magnesium, potassium and vitamin C. They have been studied and results confirm that they likely alter the way cancer cells reproduce so they may reduce cancer risk. They are full of fiber and for their tiny size contain a lot of health benefits. Remove the greens from these to help keep the roots crisp for storing.

  4. Salad Mix—These leafy greens are a rich source of vitamins A, K and folate. Also a good anti- inflammatory leafy green.

  5. Baby Bok Choy—Full of anti-cancer properties such as Vitamins C & E, beta carotene, and selenium which is thought to slow the growth rate of tumors.

  6. Garlic Scapes—the list of health benefits is almost too long!! It’s anti-fungal, anti- inflammatory, boosts immune health, and is full of antioxidants! Just eat garlic with every meal!
